Tequila Lingo:

Reposado- This is the first definite level of aging. The taste is dominated by fresh agave with spice, but then acquires caramel aromas and flavors from the oak aging. Balance is key. Reposados are typically aged at least 2 months and no longer than 1 year.

Anejo- means"vintage" and is the richest, smoothest and most complex of all the Tequilas. It should taste of agave and then quickly introduce layers of complex fruit and floral textures. Anejos are typically aged between 1 and 3 years. They are darker in color and the longer barrel aging lends a luscious blend of toasty oak and caramel that implies sweetness but finishes dry.

 


Plate- 
or Blanco, should be full of fresh agave aromas and flavors, but should exhibit spice, fruit and floral components. These are not aged, but stored in tanks for 2 months and then bottled. When caramel is added to the Blanco Tequila to make it appear aged, it is called Joven Abocado. This Tequila is the sweetest with mild agave intensity and caramel and vanilla notes.
